What are we eating today? This vegan lasagna is now going viral on the internet. Fast, easy and healthy. We know what we're having for dinner tonight.
lasagna is a perfect recipe for using lots of vegetables. But you often also fill the lasagna with cheese. In this plant-based variant, the cheese has been replaced by vegan ricotta. If you can't find this, you can also use vegan mozzarella.
Vegan lasagna recipe

- Preheat the oven to 180°C (350°F). Grease an oven dish with some olive oil.
- Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic and fry until soft and light brown.
- Add the zucchini slices, eggplant and diced red pepper to the pan. Fry them for 5-7 minutes until soft. Then add the diced tomatoes, tomato puree, oregano, basil, salt and pepper. Simmer the sauce for 10-15 minutes, stirring occasionally.
- In a separate bowl, mix the vegan ricotta (or tofu) with the chopped spinach.
- Cover the bottom of the baking dish with a thin layer of the tomato sauce. Then place a layer of lasagna sheets on top, followed by a layer of the ricotta-spinach mixture. Repeat these layers until all ingredients are used up, ending with a layer of tomato sauce.
- Sprinkle the top of the lasagna with crushed vegan cheese.
- Cover the baking dish with aluminum foil and bake the lasagna in the preheated oven for 30 minutes. Then remove the aluminum foil and bake for another 15 minutes, or until the cheese is golden brown.
- Remove the lasagna from the oven and let it cool for a few minutes before cutting. Serve warm and enjoy this delicious vegan lasagna!
